This is a wonderful dish to bring to the company potluck and should be made a day in advance


one (1) large purple onion

two (2) 15 oz organic sweet corn (drained)

one (1) 22.5 oz organic black eyed peas (drained and rinsed)

one (1) 22.5 oz organic black beans (drained and rinsed)

two (2) fresh jalapenos (I only remove the seeds from one - can be hot)

one (1) large head parsley

one (1) each orange, yellow and green bell pepper

20 heirloom cherry tomatos*

one (1) bunch green onion* (use the entire onion, greens as well)

four or five (4-5) avocados*

Dice all fresh ingredients and add 3 tbls raw local honey, 1/4 cup apple cider vinegar and 1/2 cup olive oil

Add salt & pepper to taste, mix well and serve

*add as close to serving as you can
